Sun (oven) dried cherry tomatoes ================================== - Cherry Tomatos - Salt 1) Pre-heat oven to 200 degrees 2) Cut cherry tomotoes in half 3) Put on rimmed pan lined with parchment paper. Cut side up, tomatoes touching each other in single layer 4) Sprinkle with salt 5) Cook for 5 hrs until dried and leathery Store: - Freezer: Up to 6 months (freeze on pan like berries, then move to bag in freezer) - Fridge: 1 week or 3 weeks in olive oil - Pantry jar: 2-3 days Reconsititute: - If desired, reconsititute in water or olive oil (olive oil it best). Save olive oil afterwards for use as tomato vinagrette Uses: - On pizza, in pasta, on sandwich, soups, salads, omlettes, sauces - Remember, if not reconstituted flavor will be more intense.
